    Prep the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips, about 1/4 inch thick, to mimic traditional fries.

    Soak the Fries

    Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes for crispier fries.

Cooking

    Heat the Oil

    In a deep pot or fryer, pour in the vegetable oil and heat it to 350°F (175°C) over medium heat.

    Fry the Potatoes

    Once the oil is hot, drain the soaked fries and pat them dry with a towel. Carefully add the fries in batches to the hot oil, frying for about 5-7 minutes or until golden brown and crispy.

    Drain and Season

    Using a slotted spoon, remove the fries from the oil and drain them on a paper towel-lined plate. While they are still hot, sprinkle Old Bay seasoning, salt, and black pepper over the fries to taste.
