For the Honey Lavender Syrup

    Prepare the Lavender Infusion

    In a saucepan, combine 1 cup of dried culinary lavender and 2 cups of water. Bring the mixture to a simmer over medium heat, then reduce the heat to low and let it steep for about 15 minutes. This will extract the flavor and color from the lavender.

    Strain the Mixture

    After steeping, remove the saucepan from heat. Strain the mixture through a fine mesh sieve into a clean bowl to remove the lavender buds. Discard the used lavender.

    Make the Syrup

    Return the strained lavender infusion to the saucepan. Add 1 cup of honey to the lavender water and stir over low heat until the honey is completely dissolved. Allow the syrup to cool before using. You can store the syrup in the refrigerator for up to two weeks.

For the Tonic

    Mix the Tonic

    In a large pitcher, combine the cooled honey lavender syrup (about 1/2 cup or to taste) with 1 cup of fresh lemon juice. Stir well to combine the flavors.

    Add Sparkling Water

    Slowly add 4 cups of sparkling water to the mixture in the pitcher, taking care not to stir too vigorously to preserve the bubbles.

    Serve the Tonic

    Fill glasses with ice cubes (about 1/2 cup per glass). Pour the honey lavender tonic over the ice and garnish with fresh lavender sprigs. Serve immediately and enjoy!
