Preparation

    Make Mango Puree

    Peel and chop ripe mangoes into small pieces. Blend the mango pieces in a blender until smooth to create mango puree. Measure out 2 cups.

    Prepare Sugar Syrup

    In a saucepan, combine 1 cup of granulated sugar with 4 cups of water. Heat over medium heat, stirring until the sugar completely dissolves. Remove from heat and let it cool.

    Combine Ingredients

    In a large mixing bowl, combine the cooled sugar syrup, mango puree, 1 cup of lemon juice, and 1 tsp of yeast. Stir well to combine all ingredients.

Fermentation

    Ferment the Mixture

    Transfer the mixture to a clean fermentation vessel. Cover with a cloth or airlock and let it ferment at room temperature for about 5 to 7 days, stirring daily. The mixture should start to bubble, indicating fermentation.

    Strain and Bottle

    After fermentation is complete, strain the mixture through a fine mesh sieve to remove solids. Pour the liquid into clean bottles, leaving some space at the top.

    Add Flavorings

    Add 1 cup of fresh mint leaves and 2 tsp of lime zest to the bottles for additional flavor. Seal the bottles tightly.

    Chill and Serve

    Refrigerate the bottles for at least 24 hours before serving. To serve, pour over ice and garnish with sliced fresh mango.
