For the Whipped Potatoes

Method

Prepare the Chicken

  1. 1

    Marinate the Chicken

In a bowl, combine olive oil, salt, black pepper, and Old Bay seasoning. Add chicken breasts, ensuring they are well coated. Marinate for at least 30 minutes.

  2. 2

    Grill the Chicken

Preheat the grill to medium-high heat. Grill the marinated chicken breasts for about 6-7 minutes on each side or until fully cooked, reaching an internal temperature of 165°F (75°C). Remove from grill and let rest.

Make the Crab Sauce

  1. 3

    Sauté Garlic

In a saucepan over medium heat, melt the butter. Add minced garlic and sauté for 1-2 minutes until fragrant.

  2. 4

    Prepare the Sauce

Pour in the heavy cream, add Old Bay seasoning and lemon juice. Stir well and allow to simmer for 5 minutes, stirring occasionally.

  3. 5

    Add Crab Meat

Gently fold in the jumbo lump crab meat, cooking for an additional 2-3 minutes until warmed through. Remove from heat.

Prepare the Whipped Potatoes

  1. 6

    Cook the Potatoes

In a large pot, boil water and add the cubed russet potatoes. Cook until tender, about 15-20 minutes.

  2. 7

    Whip the Potatoes

Drain the potatoes and return them to the pot. Add butter, heavy cream, salt, and black pepper. Mash and whip until smooth and fluffy.

Prepare the Vegetable

  1. 8

    Cook the Vegetable

In a skillet over medium heat, add olive oil. Add your vegetable of choice and season with salt and black pepper. Sauté until tender, about 5-7 minutes.

Assemble the Dish

  1. 9

    Plate the Dish

On each plate, place a portion of whipped potatoes, a grilled chicken breast on top, and generously spoon the crab sauce over the chicken. Serve with the sautéed vegetable on the side.
