Method

Prepare the Cider

    Combine Ingredients

    In a large pot, combine the apple cider, brown sugar, cinnamon sticks, whole cloves, and star anise.

    Heat the Mixture

    Place the pot over medium heat and bring the mixture to a simmer. Stir occasionally until the brown sugar has dissolved completely.

    Simmer

    Once simmering, reduce the heat to low and let the mixture simmer for about 30 minutes to allow the flavors to meld. Remove from heat and cover.

Make the Caramel

    Prepare the Caramel

    In a medium saucepan over medium heat, add the granulated sugar and cook, stirring constantly until it melts and turns a golden amber color.

    Add Butter

    Once the sugar is melted, carefully add the unsalted butter and stir continuously until melted and fully combined.

    Incorporate Cream and Salt

    Slowly pour in the heavy cream while stirring. Be cautious as the mixture may bubble. Add salt and stir until smooth.

    Cool the Caramel

    Remove from heat and let the caramel cool slightly before using.

Serve the Drink

    Strain the Cider

    Strain the apple cider mixture to remove the spices and transfer the cider to mugs.

    Add Caramel

    Drizzle the prepared caramel sauce over the hot cider in each mug.

    Garnish

    Top each mug with a dollop of whipped cream and sliced apples for garnish.
