Preparing the Salmon

    Preheat the Broiler

    Preheat your oven's broiler to high.

    Season the Salmon

    Pat the salmon fillets dry with a paper towel. Brush each fillet with olive oil and season with salt, black pepper, and lemon juice. Place them on a broiler-safe pan.

    Broil the Salmon

    Broil the salmon for about 6-8 minutes, or until the salmon is cooked through and flakes easily with a fork.

Making the Lemon Butter Sauce

    Melt the Butter

    In a small saucepan over medium heat, melt the butter. Add the minced garlic and sauté for 1-2 minutes until fragrant.

    Add Seasoning

    Stir in the lemon zest and season with salt and black pepper to taste. Remove from heat.

Preparing the Garlic Parmesan Risotto

    Sauté Onion and Garlic

    In a large saucepan, heat olive oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute.

    Add Arborio Rice

    Stir in the Arborio rice and cook for 1-2 minutes until the rice is lightly toasted.

    Add Broth Gradually

    Begin adding the broth, one ladle at a time, stirring frequently. Allow the rice to absorb the broth before adding more. Continue until the rice is creamy and al dente, about 18-20 minutes.

    Finish Risotto

    Stir in the grated Parmesan cheese, and season with salt and black pepper to taste. Remove from heat.

Cooking the Vegetable of the Day

    Prepare the Vegetable

    Wash and trim the vegetable of your choice. For asparagus, trim the woody ends; for broccoli, cut into florets.

    Sauté the Vegetable

    In a skillet, heat olive oil over medium heat. Add the vegetable and season with salt and black pepper. Sauté for about 5-7 minutes until tender yet crisp.
