Shrub Base Preparation

    Prepare the Berries

    Wash the fresh mixed berries thoroughly under cold running water. Remove any stems or leaves and chop the larger strawberries into smaller pieces.

    Combine Ingredients

    In a medium-sized mixing bowl, combine the chopped berries, sugar, and apple cider vinegar. Stir well to ensure the sugar is evenly distributed.

    Macerate the Mixture

    Cover the bowl with plastic wrap and let it sit at room temperature for about 1 to 2 hours, allowing the berries to macerate and release their juices.

    Strain the Shrub

    After the maceration period, strain the berry mixture through a fine mesh sieve into a clean jar or bottle, pressing down on the berries to extract as much liquid as possible. Discard the solids.

    Add Water

    Mix in 1 cup of water into the strained liquid to dilute the shrub base. Stir well and store in the refrigerator for up to 2 weeks.

    Prepare Serving Glasses

    In each serving glass, add ice cubes to fill about halfway.

    Mix the Drink

    Pour 1/4 cup of the prepared shrub base over the ice in each glass. Top off with 1/2 cup of sparkling water.

    Garnish each drink with fresh mint leaves. Stir gently to combine and serve immediately while cold.
