Preparation of Scallops

    Prepare the Scallops

    Pat the sea scallops dry with paper towels to remove excess moisture. This step is crucial for achieving a good sear. Season lightly with salt and set aside.

    Wrap the Scallops

    Take each scallop and wrap it with a slice of peppered bacon. Secure the bacon with a toothpick if necessary. Ensure the bacon covers most of the scallop but leaves the top exposed for broiling.

Cooking the Scallops

    Broil the Scallops

    Preheat your broiler to high. Place the bacon-wrapped scallops on a broiler pan or a baking sheet lined with aluminum foil for easy cleanup. Broil for about 8-10 minutes, turning halfway through, until the bacon is crispy and the scallops are opaque and cooked through.

Making the Southern Mustard Sauce

    In a small bowl, combine the yellow mustard, honey, apple cider vinegar, hot sauce, and black pepper. Whisk together until smooth and well combined.
