    Cook Boudin

    In a skillet over medium heat, cook the boudin sausage for about 5-7 minutes, turning occasionally until heated through. Remove from heat and let cool slightly before removing the casing and breaking it into smaller pieces.

    Mix Cheeses

    In a mixing bowl, combine the shredded cheddar and mozzarella cheeses. Set aside.

    Prepare the Bread

    Take two slices of sourdough bread and spread butter on one side of each slice. Sprinkle garlic powder evenly over the buttered sides.

    Stuff the Sandwich

    On the unbuttered side of one slice, layer half of the cheese mixture, followed by the cooked boudin pieces, and then the remaining cheese mixture. Top with the second slice of bread, ensuring the buttered side is facing out.

    Heat a non-stick skillet over medium heat. Place the assembled sandwich in the skillet and cook for about 3-4 minutes until golden brown. Carefully flip and cook the other side for an additional 3-4 minutes until the cheese is melted and the bread is crispy.
