Preheat Grill
Preheat your grill to medium-high heat, or prepare a grill pan on the stovetop.

Prepare the Potatoes
Peel the russet potatoes and cut them into thin, matchstick-sized pieces to create shoestring fries.

Soak the Potatoes
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch, which helps achieve crispiness.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Drain the soaked potatoes and pat them dry with paper towels. Carefully add them to the hot oil in batches, frying for about 3-4 minutes until golden brown and crispy. Remove and drain on paper towels. Sprinkle with salt to taste.
