    Prepare the Grits

    In a medium saucepan, bring 4 cups of water to a boil. Add 1 tsp of salt and slowly whisk in 1 cup of stone-ground grits. Reduce the heat to low, cover, and simmer for 20-25 minutes, stirring occasionally until thickened.

    Finish the Grits

    Once the grits are cooked, stir in 2 tbsp of butter and 1 cup of cheddar cheese until melted and creamy. Keep warm.

Shrimp

    Cook the Shrimp

    In a large skillet, heat 2 tbsp of olive oil over medium-high heat. Add 3 minced garlic cloves and sauté for 1 minute until fragrant. Add 1 lb of shrimp, 1 tsp paprika, 1 tsp cayenne pepper, 1 tsp black pepper, and salt to taste. Cook for 3-4 minutes until the shrimp are pink and cooked through.

Cream Sauce

    Make the Cream Sauce

    In the same skillet used for the shrimp, lower the heat and add 1 cup of heavy cream and 1 cup of chicken broth. Stir in 2 tbsp of hot sauce and bring to a simmer. Cook for about 5 minutes until slightly thickened.

    Add the Shrimp

    Return the cooked shrimp to the skillet, and let them simmer in the cream sauce for an additional 2-3 minutes until heated through. Stir in a bunch of sliced green onions.
