Preparing the Oysters

Shucking the Oysters
Using an oyster knife, carefully insert the blade into the hinge of the oyster. Twist the knife to pry the shell open, then slide the knife along the inside of the shell to detach the oyster from the shell. Remove the top shell and place the oysters on a chilled platter.
Making the Mignonette Sauce

Preparing the Mignonette
Finely chop the shallots and place them in a small bowl. Add the red wine vinegar and freshly ground black pepper to the bowl. Stir well to combine the ingredients and let the mixture sit for at least 10 minutes to allow the flavors to meld.
Serving

Presentation
Arrange the freshly shucked oysters on the platter. Serve them with the mignonette sauce on the side for drizzling over the oysters. Enjoy immediately.
