For the Biscuit Base

    Prepare the Dough

    In a large mixing bowl, combine all-purpose flour, baking powder, and salt. Mix well.

    Cut in the Butter

    Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

    Add Milk

    Pour in the milk gradually, stirring until the dough just comes together. Do not overmix.

    Shape and Bake

    Turn the dough out onto a floured surface and gently knead for about 30 seconds. Pat into a circle about 1 inch thick. Cut into rounds and place on a baking sheet. Bake at 400°F (200°C) for 15-20 minutes until golden.

For the Homemade BBQ Sauce

    Combine Ingredients

    In a saucepan, combine ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, salt, and black pepper.

    Cook the Sauce

    Bring the mixture to a boil over medium heat, then reduce to low and simmer for 10-15 minutes, stirring occasionally, until thickened.

For the Grilled Cheese

    Prepare the Boudin

    Cook the boudin sausage according to package instructions (usually pan-frying or grilling) until heated through. Slice into rounds.

    Assemble the Grilled Cheese

    Take two slices of bread and layer them with cheese and the sliced boudin. Top with another slice of bread.

    Grill the Sandwich

    Heat a skillet over medium heat and add 1 tbs of butter. Place the sandwich in the skillet and grill until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.

    Serve

    Once grilled, remove the sandwich from the skillet, slice it in half, and serve on top of a biscuit with a generous drizzle of homemade BBQ sauce.
