Method

Crust Preparation

  1. 1

    Make the Dough

In a mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Add the unsalted butter and mix until the mixture resembles coarse crumbs.

  2. 2

    Add Egg and Water

Stir in the egg yolk and gradually add ice water, mixing until the dough comes together. If the dough is too crumbly, add a little more water, one teaspoon at a time.

  3. 3

    Chill the Dough

Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

  4. 4

    Roll Out the Dough

After chilling, roll out the dough on a floured surface to fit a 9-inch tart pan. Transfer the dough to the tart pan and press it into the bottom and sides.

  5. 5

    Pre-bake the Crust

Preheat your oven to 350°F (175°C). Prick the bottom of the crust with a fork and bake for 15 minutes, until lightly golden. Remove from the oven and set aside.

Filling Preparation

  1. 6

    Whisk Ingredients

In a mixing bowl, whisk together the granulated sugar, eggs, and egg yolks until well combined and slightly frothy.

  2. 7

    Add Lemon Juice and Zest

Add the fresh lemon juice and lemon zest to the egg mixture, whisking until fully incorporated.

  3. 8

    Incorporate Heavy Cream

Gently fold in the heavy cream until the mixture is smooth and even.

  4. 9

    Pour into Crust

Pour the lemon filling into the pre-baked tart crust, spreading it evenly.

  5. 10

    Bake the Tart

Bake the tart in the oven for 25-30 minutes, or until the filling is set but still slightly wobbly in the center.

  6. 11

    Cool the Tart

Remove the tart from the oven and let it cool at room temperature for about 1 hour. Refrigerate for at least 2 hours before serving.

Topping Preparation

  1. 12

    Prepare Topping (optional)

Before serving, dust the top of the tart with powdered sugar and garnish with fresh berries if desired.
