Prepare the Oysters
Rinse the oysters under cold water to remove any grit or sand. Drain and pat them dry with paper towels.

Set Up the Breading Station
In a shallow dish, place the all-purpose flour. In another shallow dish, whisk together the eggs and milk. In a third shallow dish, mix the cornmeal, salt, black pepper, and cayenne pepper.

Heat the Oil
In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Oysters
Carefully add the breaded oysters to the hot oil, working in batches to avoid overcrowding. Fry for about 2-3 minutes on each side, or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Mix the Ingredients
In a medium bowl, combine the mayonnaise, dill pickle relish, capers, lemon juice, and chopped fresh dill.

Season the Sauce
Add salt and black pepper to taste, mixing well to combine.

Chill and Serve
Cover the tartar sauce and refrigerate for at least 30 minutes to let the flavors meld. Serve alongside the fried oysters.
