Fish Preparation

Prepare the Batter
In a large bowl, whisk together the flour, cornstarch, baking powder, salt, black pepper, and cayenne pepper. Gradually add the cold beer or sparkling water, stirring until a smooth batter forms.

Heat the Oil
In a deep frying pan or large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Fish
Dip each fish fillet into the batter, allowing any excess to drip off. Carefully place the battered fish into the hot oil and fry for about 4-5 minutes, or until golden brown and cooked through. Remove and drain on paper towels.
Cabbage Slaw Preparation

Mix the Slaw
In a mixing bowl, combine the thinly sliced cabbage, grated carrot, and chopped cilantro. Drizzle with lime juice and sprinkle with salt. Toss until well combined. Set aside to let the flavors meld together.
Chipotle Mayo Preparation

Make the Chipotle Mayo
In a small bowl, mix together the mayonnaise, minced chipotle peppers, lime juice, and salt to taste. Stir until smooth and well combined.

Assemble the Tacos
Warm the corn tortillas in a dry skillet over medium heat until pliable. Place a piece of fried fish on each tortilla, top with a generous amount of cabbage slaw, and drizzle with chipotle mayo. Serve immediately.
