    Prepare the Ingredients

    Chop the chicken thighs into bite-sized pieces. Slice the chorizo sausage into rounds. Dice the red bell pepper, onion, and zucchini. Mince the garlic cloves.

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, and sauté until the onion becomes translucent, about 3-4 minutes.

    Add Chicken and Chorizo

    Add the chicken pieces and chorizo rounds to the skillet. Cook until the chicken is browned on all sides, about 6-8 minutes.

    Incorporate Zucchini and Bell Pepper

    Stir in the diced zucchini and red bell pepper. Cook for another 5 minutes until the vegetables are tender.

    Season and Deglaze

    Sprinkle paprika, cumin, salt, and black pepper over the mixture. Pour in the red wine, scraping the bottom of the pan to deglaze and incorporate all the flavors. Let it simmer for an additional 5 minutes.
