Grilled Cheese Preparation

    Prepare the Bread and Cheese

    Preheat a skillet over medium heat. Butter one side of each slice of sourdough bread. Place cheddar cheese slices between two slices of bread, buttered sides out.

    Grill the Cheese

    Place the sandwich in the skillet and grill for about 3-4 minutes on each side or until the bread is golden brown and the cheese is melted. Remove from skillet and set aside.

Boudin Filling Preparation

    Cook the Filling

    In a skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until fragrant and translucent.

    Add Meats

    Remove the casings from the boudin sausage and crumble it into the skillet. Add the pulled pork and mix well. Cook until heated through, about 5-7 minutes. Remove from heat.

BBQ Sauce Preparation

    Make the BBQ Sauce

    In a saucepan, combine ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, salt, and black pepper. Cook over medium heat, stirring frequently until the sauce simmers and thickens slightly, about 5-10 minutes.

Assembly

    Assemble the Sandwich

    Spread a generous amount of the boudin filling on one slice of grilled cheese. Drizzle with BBQ sauce, then top with the other slice of grilled cheese.

    Cut the sandwich in half and serve warm with extra BBQ sauce on the side.
