Method

Preparation

  1. 1

    Prepare the Chicken

Preheat your oven to 400°F (200°C). Pat the chicken thighs dry with paper towels and place them in a large bowl.

  2. 2

    Season the Chicken

Add olive oil, minced garlic, chopped rosemary, the juice of the lemon, salt, and black pepper to the bowl with the chicken. Toss to coat the chicken evenly with the marinade.

  3. 3

    Optional Vegetables

If using, chop vegetables into bite-sized pieces and place them in a separate bowl. Drizzle with olive oil, salt, and pepper, and toss to coat.

Cooking

  1. 4

    Arrange Chicken and Vegetables

Place the marinated chicken thighs in a baking dish. If using vegetables, arrange them around the chicken in the dish.

  2. 5

    Add Broth (if using)

If you opted for chicken broth, pour it into the baking dish around the chicken and vegetables.

  3. 6

    Bake

Bake in the preheated oven for approximately 35-40 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C). Vegetables should be tender.

Serving

  1. 7

    Rest and Serve

Once cooked, remove the baking dish from the oven and let the chicken rest for 5 minutes before serving. Enjoy your cuisses de poulet with the roasted vegetables!
