For the Boudin Balls

    Prepare the Boudin Mixture

    In a large bowl, remove the boudin sausage from its casing and crumble it into the bowl. Add the cooked white rice, chopped green onions, garlic powder, paprika, and black pepper. Mix until well combined.

    Form the Balls

    Once the mixture is combined, take a small amount (about 2 tablespoons) of the mixture and form it into a ball. Repeat until all the mixture is used.

    Coat the Balls

    In a separate bowl, beat the eggs. In another bowl, place the breadcrumbs. Dip each boudin ball first into the beaten eggs, allowing excess to drip off, then roll in the breadcrumbs until fully coated.

    Heat the Oil

    In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches about 350°F (175°C).

    Fry the Boudin Balls

    Carefully place the breaded boudin balls in the hot oil, frying in batches to avoid overcrowding. Fry for about 4-5 minutes or until golden brown on all sides. Remove and drain on paper towels.
