Prepare Beignet Dough

Mix Dry Ingredients
In a large mixing bowl, combine 4 cups of all-purpose flour, 1 cup of granulated sugar, 2 teaspoons of instant yeast, and 1 teaspoon of salt. Whisk together until well combined.

Warm Milk and Add Eggs
In a small saucepan, heat 1 cup of whole milk over low heat until warm (not boiling). Remove from heat and whisk in 2 large eggs, 1 tablespoon of unsalted butter, and 1 teaspoon of vanilla extract until fully incorporated.

Combine Mixtures
Create a well in the center of the dry ingredients and pour the warm milk mixture into it. Stir until the dough begins to form.

Knead the Dough
Transfer the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Prepare Oil for Frying
In a large, deep pot, heat 4 cups of vegetable oil over medium heat until it reaches 350°F (175°C). Use a thermometer for accurate measurement.

Shape and Cut Dough
Once the dough has risen, punch it down and roll it out on a floured surface to about 1/4 inch thick. Cut into squares or rectangles using a sharp knife or pizza cutter.

Fry Beignets
Carefully drop a few pieces of dough into the hot oil, being cautious not to overcrowd the pot. Fry for about 2-3 minutes on each side until golden brown. Remove and drain on paper towels.
