Prepare the Dough

    Activate the Yeast

    In a small bowl, mix together the warm water, active dry yeast, and 1 tablespoon of sugar. Let it sit for about 5-10 minutes until frothy.

    Mix the Wet Ingredients

    In a large bowl, combine the milk, egg, vanilla extract, and melted butter. Stir in the activated yeast mixture.

    Combine Dry Ingredients

    In another bowl, whisk together the flour, remaining sugar, and salt.

    Make the Dough

    Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth.

    Let It Rise

    Place the dough in a clean bowl, cover with a damp cloth, and let it rise in a warm place for about 1-1.5 hours, or until doubled in size.

Fry the Beignets

    Prepare the Oil

    In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).

    Shape the Beignets

    Once the dough has risen, punch it down and roll it out on a floured surface to about 1/4 inch thickness. Cut into squares or triangles.

    Fry the Beignets

    Carefully drop the cut dough into the hot oil, frying in batches until golden brown, about 2-3 minutes per side. Remove with a slotted spoon and drain on paper towels.

    Serve

    Dust the fried beignets with powdered sugar. Serve warm with coffee.
