Preparation of Meat

    Prepare the Pork Shoulder

    Rub the pork shoulder with olive oil, smoked paprika, cayenne pepper, thyme, salt, and black pepper. Let it marinate for at least 2 hours or overnight in the refrigerator.

    Prepare the Brisket

    Season the brisket with salt, black pepper, and a drizzle of olive oil. Let it sit for 30 minutes before cooking.

    Prepare the Chicken

    Rub the whole chicken with olive oil, lemon juice, and season generously with salt and black pepper. Allow it to marinate for at least 1 hour.

Cooking the Meat

    Cook the Pork Shoulder

    Preheat the oven to 300°F (150°C). Place the marinated pork shoulder in a roasting pan and cover with foil. Cook for 4-5 hours until tender and easily shreds with a fork.

    Cook the Brisket

    Place the seasoned brisket in a smoker or on a grill at medium heat. Smoke or grill for 3-4 hours until it reaches the desired tenderness.

    Cook the Chicken

    Roast the marinated chicken in the oven at 350°F (175°C) for about 1 hour, or until the internal temperature reaches 165°F (75°C).

Making the Homemade Sausage

    Prepare the Sausage Mix

    In a large bowl, combine ground pork, minced garlic, paprika, fennel seeds, salt, and black pepper. Mix thoroughly.

    Stuff the Sausage

    Prepare the casings as per the instructions. Use a sausage stuffer to fill the casings with the sausage mixture. Twist into links and tie the ends.

    Cook the Sausage

    Grill or pan-fry the sausage links over medium heat until fully cooked, about 10-15 minutes.
