Cheesecake Filling

Prepare the Crust
In a mixing bowl, combine the graham cracker crumbs, sugar, melted butter, and salt. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake in a preheated oven at 350°F (175°C) for 10 minutes. Remove from oven and let cool.

Make the Filling
In a large mixing bowl, beat the cream cheese until smooth. Gradually add the granulated sugar and continue to beat until creamy. Add in the sour cream, vanilla extract, and eggs one at a time, mixing well after each addition until completely smooth.

Combine and Bake
Pour the cheesecake filling over the cooled crust. Bake in the preheated oven at 325°F (160°C) for about 60-70 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.

Chill and Serve
Refrigerate the cheesecake for at least 4 hours or overnight. Once chilled, carefully remove the sides of the springform pan. Slice and serve with your favorite seasonal toppings, such as fresh fruit or chocolate sauce.
