Prepare the Blue Cheese Dressing

In a small bowl, mix together the bleu cheese, a tablespoon of olive oil, salt, and pepper. Use a fork to mash the cheese and mix until creamy. Set aside.

Cook the Mushrooms

In a skillet, heat the remaining tablespoon of olive oil over medium heat. Add the sliced mushrooms and sauté for about 5-7 minutes until golden brown and tender. Season with salt and pepper to taste.

Form and Cook the Burgers

In a large bowl, combine the ground beef, salt, and pepper. Form into 4 equal patties. Preheat a grill or skillet over medium-high heat and cook the patties for about 4-5 minutes per side, or until they reach your desired level of doneness.

Assemble the Burger

Toast the burger buns lightly on the grill or in a toaster. On the bottom half of each bun, place a lettuce leaf, followed by the cooked burger patty, sautéed mushrooms, a slice of tomato, and onion. Drizzle with the prepared bleu cheese dressing before topping with the other half of the bun.
