Preparation of Artichokes

Prepare the Artichokes
Begin by rinsing the artichokes under cold water. Trim the stems and remove the tough outer leaves, exposing the tender inner leaves. Cut off the top inch of each artichoke to remove the thorny tips. Rub the cut edges with lemon juice to prevent browning.

Open the Artichokes
Gently spread the leaves of the artichokes apart to create space for the stuffing. This can be done by gently pulling the outer leaves or using a spoon to help open them.

Mix the Stuffing
In a large bowl, combine the breadcrumbs, grated Parmesan cheese, chopped parsley, minced garlic, salt, black pepper, and olive oil. Mix well until all ingredients are thoroughly combined and the mixture is crumbly.

Stuff the Artichokes
Spoon the stuffing mixture into each artichoke, pressing it down between the leaves as you go. Ensure each artichoke is generously filled with stuffing.

Steam the Artichokes
Place the stuffed artichokes in a steamer basket over boiling water. Cover and steam for about 30-40 minutes, or until the leaves can be easily pulled off.

Serve the Dish
Once the artichokes are done steaming, remove them from the heat and let them cool slightly. Drizzle the sautéed mushroom mixture over the stuffed artichokes before serving.
