Method
Chicken Spedini
Marinate the Chicken
Cut the chicken breast into bite-sized pieces and add to the marinade. Cover and refrigerate for at least 30 minutes or up to 2 hours.
Prepare Skewers
Soak wooden skewers in water for 30 minutes to prevent burning. Thread marinated chicken pieces onto skewers.
Amogio
Prepare the Amogio Sauce
In a small saucepan, heat olive oil over medium heat. Add minced garlic and red pepper flakes, sautéing until fragrant, about 1-2 minutes.
Finish the Sauce
Stir in chopped parsley, salt, and lemon juice. Remove from heat and set aside.
Pasta Sugo
Cook the Pasta
Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
Add Garlic and Tomatoes
Add minced garlic and cook for an additional minute. Then, add crushed tomatoes, basil, salt, and black pepper. Simmer for 15-20 minutes.
Combine Pasta and Sauce
Toss the cooked pasta with the sugo until well coated. Serve with chicken spedini on top, drizzled with amogio.
