Method

Pasta Preparation

  1. 1

    Cook the Pasta

In a large pot, bring salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

Vegetable Preparation

  1. 2

    Sauté the Vegetables

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the zucchini, bell pepper, broccoli, and carrots to the skillet and sauté for about 5-7 minutes, until they are tender yet still crisp. Add the cherry tomatoes and cook for an additional 2 minutes.

Combining Ingredients

  1. 3

    Mix Pasta with Vegetables

Add the cooked pasta to the skillet with the sautéed vegetables. Toss everything together, adding reserved pasta water a little at a time to create a light sauce. Season with salt and black pepper to taste.

Serving

  1. 4

    Finish and Serve

Remove from heat and stir in grated Parmesan cheese and fresh basil. Serve immediately with extra Parmesan on the side if desired.
