    Roast Garlic

    Preheat your oven to 400°F (200°C). Slice the tops off the garlic bulbs to expose the cloves. Drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft and golden. Allow to cool.

    Prepare Dipping Oil

    In a mixing bowl, combine the extra virgin olive oil, crushed red pepper flakes, and the roasted garlic (squeezed out of their skins). Mash the garlic into the oil using a fork or a whisk, mixing until well combined.

    Add Fresh Herbs

    Finely chop the fresh basil and oregano leaves. Add them to the olive oil mixture, stirring well to incorporate.

    Season the Mixture

    Season the dipping oil with salt and black pepper to taste. Adjust the seasoning according to your preference.

    Serve

    Transfer the dipping oil into a small serving bowl. Sprinkle the freshly grated Parmigiano Reggiano on top. Serve immediately with warm Italian bread for dipping.
