Prepare the Artichokes
Fill a large bowl with water and add the lemon juice. Trim the stems of the artichokes and remove any small leaves from the base. Submerge the artichokes in the lemon water to prevent browning.

In a large pot, bring salted water to a boil. Add the artichokes and cook for about 30-40 minutes, or until the outer leaves are tender. Remove from water and allow to cool slightly.

Once cool, gently pull the leaves apart to create space for the filling. Use a spoon to scoop out the fuzzy choke in the center of each artichoke.

In a large bowl, combine the shrimp, crab meat, breadcrumbs, Parmesan cheese, minced garlic, mayonnaise, Dijon mustard, chopped parsley, Old Bay seasoning, salt, and black pepper. Mix well until all ingredients are combined.

Spoon the seafood mixture into each prepared artichoke, packing the filling tightly between the leaves and in the center.
