Calamari Preparation

Prepare the Calamari
In a large bowl, combine cleaned calamari rings and water. Allow to soak for about 15 minutes.

Mix the Coating
In another bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika.

Coat the Calamari
Remove calamari from the water, allowing excess water to drip off. Dredge the calamari rings in the flour mixture until well coated.

Heat the Oil
In a deep frying pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add a portion of the coated calamari to the hot oil. Fry for 2-3 minutes or until golden brown. Remove with a slotted spoon and place on paper towels to drain.

Sauté the Garlic
Add minced garlic to the oil and sauté for about 1 minute until fragrant.

Add Tomatoes and Seasonings
Stir in the crushed tomatoes, dried oregano, sugar, salt, and black pepper. Bring to a simmer.

Simmer the Sauce
Allow the sauce to simmer for 10-15 minutes, stirring occasionally. Adjust salt and pepper to taste.

Finish with Basil
Stir in the chopped fresh basil just before serving.
