Preparing the Rice

Cook the Jasmine Rice
Rinse 1 cup of jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and 1.5 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is tender and water is absorbed. Remove from heat and let it sit covered for an additional 5 minutes. Fluff with a fork before serving.

Prepare the Tuna Marinade
Cut the fresh tuna into small 1/2-inch cubes. In a bowl, combine the soy sauce, sesame oil, and chopped green onions. Add the tuna to the marinade and toss gently to coat. Cover and refrigerate for at least 15 minutes to allow the flavors to meld.

In a serving bowl, start with a base of jasmine rice. Arrange the marinated tuna on top of the rice. Add shelled edamame, diced mango, sliced avocado, and seaweed salad around the tuna. Drizzle spicy mayo over the top and sprinkle with sesame seeds for garnish.
