    Clean the Mussels

    Rinse the mussels under cold running water to remove any sand or debris. Scrub the shells with a brush and remove the beards if present.

    Prep the Chorizo

    Slice the chorizo sausage into thin rounds. Set aside.

    Chop Aromatics

    Mince the garlic and chop the shallots and parsley.

Cooking

    Sauté Chorizo

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sliced chorizo and sauté for about 3-4 minutes until it starts to brown and release its oils.

    Add Aromatics

    Add the minced garlic and chopped shallots to the pot. Sauté for another 2-3 minutes, stirring frequently, until the shallots are translucent.

    Pour in Beer

    Carefully pour in the beer and bring the mixture to a simmer.

    Add Mussels

    Once the broth is simmering, add the cleaned mussels to the pot. Stir to combine with the chorizo and broth.

    Cover and Steam

    Cover the pot with a lid and let the mussels steam for about 5-7 minutes, or until all the mussels have opened. Discard any mussels that remain closed.

    Season and Serve

    Season the broth with salt and black pepper to taste. Stir in the chopped parsley before serving. Serve hot with crusty bread to soak up the broth.
