    Prepare the Steak

    Season the sirloin steak with salt and black pepper. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Cook the steak for about 4-5 minutes on each side, or until it reaches your desired doneness. Remove from the skillet and let it rest for a few minutes before slicing into thin strips.

    Chop the Vegetables

    While the steak is resting, chop the onion, bell pepper, and mushrooms into small pieces.

    Sauté the Vegetables

    In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion, bell pepper, and mushrooms. Sauté for about 5-7 minutes or until the vegetables are softened and slightly caramelized.

    Prepare the Omelette

    In a bowl, whisk together the eggs, a pinch of salt, and black pepper. Pour the egg mixture into the skillet over the sautéed vegetables. Allow it to cook for about 2 minutes, gently lifting the edges with a spatula to let the uncooked eggs flow underneath.

    Add Cheese and Steak

    Once the omelette is mostly set, sprinkle the cheddar cheese and the sliced steak over half of the omelette. Carefully fold the other half over the filling.

    Finish Cooking

    Cook for another 1-2 minutes until the cheese is melted and the omelette is fully cooked. Slide it onto a plate and serve hot.
