Prepare the Steak
Take the New York Strip steak out of the refrigerator and let it come to room temperature for about 30 minutes.

Crust the Steak
In a spice grinder or mortar and pestle, crush the black peppercorns to a coarse texture. Rub the steak with salt and then press the crushed peppercorns into both sides of the steak.

Rest the Steak
Remove the steak from the skillet and let it rest on a cutting board for 5-10 minutes before slicing.
Fries

Prepare the Potatoes
Peel the russet potatoes and cut them into thin fries, about 1/4 inch thick.

Soak the Fries
Place the cut fries in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Drain the fries and pat them dry with paper towels. Fry the potatoes in batches, cooking for about 4-5 minutes until golden brown. Remove and drain on paper towels.

Season the Fries
Sprinkle the fries with salt while they are still hot.
