Method

Pasta Cooking

  1. 1

    Cook the Linguine

Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente, usually about 8-10 minutes. Drain the pasta and set aside, reserving 1 cup of pasta water.

Shrimp Preparation

  1. 2

    Sauté the Shrimp

In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and red pepper flakes, sautéing for about 30 seconds until fragrant. Then, add the shrimp and cook for 2-3 minutes until they turn pink and are cooked through. Remove shrimp from skillet and set aside.

Sauce Preparation

  1. 3

    Make the Sauce

In the same skillet, add the white wine and bring to a simmer. Cook for about 2-3 minutes to reduce slightly. Stir in the chopped sun-dried tomatoes, butter, lemon juice, and black pepper. Let it simmer for another 2 minutes.

Combine and Serve

  1. 4

    Combine All Components

Add the cooked linguine and shrimp back into the skillet with the sauce. Toss everything together, adding reserved pasta water as needed to reach desired consistency. Stir in the chopped parsley and adjust seasoning with salt and pepper to taste.

  2. 5

    Serve

Plate the shrimp scampi and linguine and garnish with additional parsley if desired. Serve immediately and enjoy your meal!
