Preparing the Shellfish

Shucking the Oysters
Using an oyster knife, carefully shuck each oyster while holding it in a towel. Discard the top shell and place the oysters on a platter.

Cooking the Shrimp
Bring a pot of water to a boil. Add the shrimp and cook for 2-3 minutes until they turn pink. Remove from water and place in an ice bath to stop cooking. Drain and set aside.

Preparing the Crab
If using whole crab, steam for about 15-20 minutes until cooked through. Let it cool, then crack the shell and remove the meat. Arrange the crab meat on the platter.
Making the Mignonette Sauce

Chop the Shallots
Finely chop the shallots and place them in a bowl.

Combine Ingredients
Add the red wine vinegar and black peppercorns to the chopped shallots. Stir to combine and let sit for at least 15 minutes for flavors to meld.
Plating the Shellfish Platter

Arrange the Shellfish
On a large serving platter, arrange the shucked oysters, cooked shrimp, and crab meat. Garnish with lemon wedges if desired.

Serve with Mignonette
Serve the shellfish platter with the mignonette sauce on the side for dipping.
