Prepare the Prime Rib

    Season and Roast

    Preheat your oven to 450°F (232°C). Rub the prime rib roast with salt, black pepper, garlic powder, and onion powder. Place the roast in a roasting pan, fat side up. Roast in the preheated oven for 20 minutes.

    Lower the Temperature

    After 20 minutes, reduce the oven temperature to 325°F (163°C) and continue roasting for about 1.5 to 2 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare. Remove from the oven and allow to rest for at least 20 minutes before slicing.

Prepare the Horseradish Sauce

    Mix the Sauce

    In a medium bowl, combine the prepared horseradish, sour cream, Dijon mustard, and lemon juice. Stir until well blended. Adjust seasoning with additional horseradish if desired. Refrigerate until ready to use.

Prepare the Beef Au Jus

    Simmer Ingredients

    In a saucepan, combine the beef broth, sliced onion, minced garlic, Worcestershire sauce, and thyme. Bring to a simmer over medium heat and let it cook for about 15-20 minutes, allowing the flavors to meld. Strain the mixture to remove solids and keep the liquid warm.

Assemble the Sandwich

    Toast the Hoagie Rolls

    Preheat your broiler. Cut the hoagie rolls open and place them under the broiler for 1-2 minutes until they are lightly toasted.

    Slice the Prime Rib

    Thinly slice the rested prime rib roast against the grain.

    Build the Sandwich

    Layer the thinly sliced prime rib on the toasted hoagie rolls, add a slice of Swiss cheese, and serve with a side of warm beef au jus for dipping. Top with horseradish sauce as desired.
