    Prepare the Vegetables

    Peel and dice the potatoes into small cubes. Chop the onion and bell pepper into bite-sized pieces.

Cooking the Hash

    Cook the Potatoes

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced potatoes and cook for about 10-15 minutes, stirring occasionally, until they start to become golden brown and tender.

    Add Onions and Peppers

    Add the chopped onion and bell pepper to the skillet with the potatoes. Season with salt and black pepper. Cook for an additional 5-7 minutes until the vegetables are soft and the potatoes are crispy.

Cooking the Eggs

    Fry the Eggs

    In a separate non-stick skillet, heat the remaining tablespoon of olive oil over medium heat. Crack the eggs into the skillet and cook to your desired doneness (sunny-side up, over-easy, etc.), about 3-5 minutes.

Making the Sauce

    Prepare the Dijon Sauce

    In a small bowl, mix together the Dijon mustard and mayonnaise until smooth. Adjust seasoning with salt and pepper if desired.

Serving

    Assemble the Dish

    Toast the rye bread slices. Serve the potato hash topped with the fried eggs and a drizzle of the Dijon sauce. Enjoy!
