Prepare the Lobster Filling

    Cook the Lobster Meat

    If using live lobsters, boil them in salted water for about 8-10 minutes until fully cooked. Remove the meat from the shell and chop it into bite-sized pieces.

    Mix the Filling

    In a bowl, combine the chopped lobster meat, lemon juice, chives, mayonnaise, salt, and black pepper. Mix gently until all ingredients are well combined. Taste and adjust seasoning if necessary.

Prepare the Brioche Buns

    Spread unsalted butter on the inside of each brioche bun.

    Take the toasted brioche buns and fill each with the lobster mixture, ensuring an even distribution.

    Garnish each lobster roll with additional chopped chives and serve with lemon wedges on the side.
