Lobster Preparation

    Prepare the Lobster

    Fill a large pot with 2 liters of water and bring it to a rolling boil. Ensure the pot is large enough to hold both lobsters comfortably.

    Add the Lobsters

    Once the water is boiling, carefully add the live Maine lobsters to the pot. Cover the pot with a lid.

    Steam the Lobsters

    Steam the lobsters for about 8-10 minutes per pound. For two average-sized lobsters (about 1.5 pounds each), this should take around 16-20 minutes. The lobsters will turn bright red when they are cooked.

    Remove the Lobsters

    Once cooked, use tongs to carefully remove the lobsters from the pot and place them on a platter to cool slightly.

Drawn Butter Preparation

    Melt the Butter

    In a small saucepan, melt 1 cup of unsalted butter over low heat. Allow it to melt completely without boiling.

    Skim the Foam

    As the butter melts, you may notice some white foam on the surface. Skim this off with a spoon to clarify the butter.

    Serve the Butter

    Once the butter is melted and clarified, pour it into small dipping bowls for serving alongside the steamed lobster.
