Queso Sauce

Make the Queso Sauce
In a medium saucepan over medium heat, combine the sharp cheddar cheese, cream cheese, and milk. Stir constantly until the cheeses melt and the mixture is smooth.

Season the Queso
Add the diced jalapeño peppers, garlic powder, onion powder, salt, and black pepper. Stir until everything is well combined and heated through. Set aside.
Pico de Gallo

Prepare the Pico de Gallo
In a medium bowl, combine the diced tomatoes, red onion, chopped cilantro, lime juice, and salt. Mix well and let it sit for at least 10 minutes for the flavors to meld.
Roasted Jalapeños

Roast the Jalapeños
Preheat the oven to 400°F (200°C). Slice the jalapeños in half lengthwise, remove the seeds if desired, and place them on a baking sheet. Drizzle with olive oil and sprinkle with salt.

Roast in the preheated oven for 15-20 minutes or until slightly charred. Remove from the oven and let cool.

On a large serving platter, spread out the tortilla chips as the base. Pour the warm queso sauce evenly over the chips.
