Corned Beef Hash

    Prepare the Potatoes

    Peel and dice the potatoes into small cubes. Place them in a pot of salted water and boil until tender, about 10-15 minutes. Drain and set aside.

    In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, cooking until softened, about 5 minutes.

    Add the cooked potatoes and corned beef to the skillet. Season with salt and black pepper. Cook, stirring occasionally, until everything is browned and crispy, about 10-15 minutes.

Dijon Sauce

    In a small bowl, combine the Dijon mustard, mayonnaise, and honey. Mix well until smooth.
