Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 325°F (165°C).

  2. 2

    Prepare the Ham

Place the bone-in ham on a roasting rack in a large roasting pan. Score the surface of the ham in a diamond pattern with a sharp knife.

Make the Glaze

  1. 3

    Combine Glaze Ingredients

In a medium bowl, mix together the brown sugar, honey, Dijon mustard, and ground cloves until well combined.

  2. 4

    Add Optional Ingredients

If using, add apple cider vinegar and chopped fresh rosemary to the glaze mixture.

Baking the Ham

  1. 5

    Apply the Glaze

Brush the glaze generously over the scored surface of the ham, ensuring it gets into the cuts.

  2. 6

    Bake the Ham

Cover the ham loosely with aluminum foil and place it in the preheated oven. Bake for approximately 1 hour and 30 minutes, or until heated through.

  3. 7

    Baste the Ham

Every 30 minutes, remove the foil and baste the ham with the pan juices to keep it moist.

Finishing Touches

  1. 8

    Glaze Again

In the last 30 minutes of cooking, remove the foil and brush the ham with more glaze to create a caramelized crust.

  2. 9

    Rest the Ham

Once cooked, remove the ham from the oven and let it rest for 15-20 minutes before slicing.
