    Prepare the Ingredients

    Start by dicing the chicken sausage, bell pepper, and onion into small pieces. Rinse the spinach under cold water and chop it roughly.

    Whisk the Eggs

    In a large bowl, whisk together the eggs and milk until well combined. Add salt and black pepper to the mixture.

    Cook the Sausage and Vegetables

    In a large oven-safe skillet, heat the olive oil over medium heat. Add the diced chicken sausage and cook until browned. Then, add the onions and bell peppers, cooking until softened. Finally, stir in the spinach until wilted.

    Combine with Egg Mixture

    Pour the egg mixture over the cooked sausage and vegetables in the skillet. Stir gently to distribute the ingredients evenly.

    Sprinkle the shredded cheddar cheese evenly over the top of the egg mixture.

    Cook on the stovetop for about 5 minutes, or until the edges start to set.
