For the Crispy Calamari

Prepare the Calamari
In a mixing bowl, combine flour, cornstarch, salt, black pepper, and paprika.

Coat the Calamari
Toss the calamari rings in the flour mixture until evenly coated. Shake off excess flour.

Heat the Oil
In a deep skillet or fryer, heat vegetable oil to 375°F (190°C).

Fry the Calamari
Fry the calamari in batches for 2-3 minutes until golden brown and crispy. Remove and drain on paper towels.
For the Charred Tomato Sauce

Prepare the Tomatoes
Preheat a grill or grill pan to medium-high heat. Toss cherry tomatoes with olive oil, salt, black pepper, and red pepper flakes.

Combine Ingredients
In a small bowl, mix mayonnaise, lemon juice, minced garlic, salt, and black pepper until well combined.

Adjust Seasoning
Taste and adjust seasoning with additional salt and pepper if needed.
To Serve

Plate the Dish
Arrange crispy calamari on a serving plate. Drizzle with charred tomato sauce and garnish with grated Parmesan, sliced cherry peppers, and chopped parsley.

Serve immediately with lemon aioli on the side for dipping.
