Crab Cakes

    Prepare the Crab Cake Mixture

    In a large bowl, combine the crab meat, mayonnaise, Dijon mustard, Old Bay seasoning, chopped green onions, beaten egg, breadcrumbs, salt, and black pepper. Mix gently to combine without breaking up the crab meat too much.

    Form the Crab Cakes

    Shape the mixture into patties, about 2-3 inches wide and 1 inch thick. You should be able to make about 6-8 crab cakes. Place them on a parchment-lined tray.

    Fry the Crab Cakes

    Heat oil in a skillet over medium heat. Once hot, add the crab cakes and cook for 4-5 minutes on each side until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.

Old Bay Hollandaise

    Prepare the Double Boiler

    In a saucepan, simmer water over low heat to create a double boiler. Place a heatproof bowl over the saucepan, ensuring the bottom of the bowl does not touch the water.

    Whisk the Egg Yolks

    In the bowl, whisk together the egg yolks, lemon juice, and water until the mixture is pale and thick.

    Incorporate the Butter

    Slowly drizzle the melted butter into the egg yolk mixture while continuously whisking until the sauce is thick and creamy.

    Season the Hollandaise

    Stir in Old Bay seasoning, salt, and black pepper. Keep warm until ready to serve.

Potatoes

    Prepare the Potatoes

    Preheat the oven to 425°F (220°C). In a bowl, toss the diced potatoes with olive oil, salt, black pepper, and paprika until evenly coated.

    Roast the Potatoes

    Spread the potatoes on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, or until golden brown and crispy, turning once halfway through.

Poached Eggs

    Prepare the Water

    In a large pot, bring water to a gentle simmer. Add vinegar to the water.

    Poach the Eggs

    Crack each egg into a small bowl. Gently slide the eggs into the simmering water, one at a time. Cook for 3-4 minutes or until the whites are set but the yolks remain runny. Remove with a slotted spoon and place on a plate.
