    Prepare the Potatoes

    Wash and peel the potatoes, then cut them into small cubes.

    Cook the Bacon

    In a large skillet, cook the bacon over medium heat until crispy, about 6-8 minutes. Remove and let drain on paper towels, then chop into small pieces.

    Fry the Potatoes

    In the same skillet with the bacon drippings, add olive oil if necessary. Add the cubed potatoes, season with salt and pepper, and cook for about 10-12 minutes until golden brown and tender, stirring occasionally.

    While the potatoes are cooking, beat the eggs in a bowl and season with salt and pepper. In a separate pan, scramble the eggs over medium heat until just set, about 3-4 minutes.

    Once the potatoes are cooked, reduce the heat to low, add the chopped bacon to the skillet with the potatoes, and then gently fold in the scrambled eggs. Sprinkle cheddar cheese over the top.
