Split the English muffins in half and toast them until golden brown.

Cook the Canadian Bacon
In a skillet over medium heat, cook the Canadian bacon slices for about 2-3 minutes on each side until they are heated through and slightly crispy.
Hollandaise Sauce Preparation

Prepare the Double Boiler
Fill a saucepan with about an inch of water and bring it to a gentle simmer. Place a heatproof bowl over the saucepan, ensuring it doesn't touch the water.

Whisk the Egg Yolks
In the heatproof bowl, whisk together the egg yolks and lemon juice until pale and slightly thickened, about 2-3 minutes.

Season the Sauce
Add salt and a pinch of cayenne pepper to taste, whisking to combine.

On each toasted English muffin half, place a slice of Canadian bacon. Drizzle generously with hollandaise sauce.
