Chili Preparation

    Cook the Beef

    In a large pot over medium heat, add olive oil. Once hot, add the chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for another minute.

    Add Ground Beef

    Add the ground beef to the pot. Cook until browned, breaking it apart with a spoon, about 7-10 minutes. Drain excess fat if necessary.

    Combine Ingredients

    Stir in the diced tomatoes, kidney beans, chili powder, cumin, salt, and black pepper. Bring to a simmer, then reduce heat to low and let it cook for 20-30 minutes, stirring occasionally.

Cheese Sauce Preparation

    Make the Roux

    In a saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for 1-2 minutes until golden.

    Add Milk

    Slowly add the milk while whisking continuously to avoid lumps. Continue to cook until the mixture thickens, about 5 minutes.

    Add Cheese

    Reduce heat to low and stir in the shredded cheddar cheese until melted and smooth. Add hot sauce and salt to taste. Keep warm.

Fry Preparation

    Prepare the Fries

    Preheat the oven to 425°F (220°C). Toss the thick-cut or sweet potato fries in a bowl with olive oil and salt.

    Spread the fries in a single layer on a baking sheet and bake for 25-30 minutes or until crispy, flipping halfway through.

    Once the fries are done, place them on a serving platter. Top with the beef chili, pour the cheese sauce over, and sprinkle with sliced scallions.
